Have Your Peanut Butter and Eat It Too

Peanut Butter is like crack cocaine for me. I can't get enough of it. I am not allergic, so all natural, just-the-peanuts-please butter is a healthful and delightful part of my diet. But to get into fighting shape, I’ve got to eliminate it. Peanut butter is calorically dense and, let’s face it, I simply cannot avoid taking liberties with the measured “Tablespoon.” They aren’t really specific about that on the label, you know. Luckily, I’ve got another trick up my sleeve. PB2.

I discovered this product about a year ago, and now I buy it by the case. When they introduced chocolate PB2, I thought I'd died and gone to heaven. I am not a PB2 spokesperson, just a very satisfied customer and happy camper. I can have my peanut butter and eat it, too - even while preparing for a figure contest!

I'll let the geniuses at Bell Plantation explain the magic that is PB2. From their web site:

“Through a unique process that doesn’t involve the use of any chemicals and doesn’t alter nature’s intended balance found within the peanut, we remove over 85% of the fat from premium quality peanuts. Essentially, the oil is squeezed out of roasted peanuts and what remains is our famous powdered peanut butter – all natural with no artificial sweeteners or preservatives. When you mix water or a favorite drink with PB2 you get the same consistency as full-fat peanut butter, with all the roasted peanut flavor, but 85% less fat calories”

Here are some suggested uses:

Chocolate Peanut Butter Protein Shake
1 scoop chocolate protein powder
2 Tablespoons PB2
1 cup almond milk
4-5 ice cubes

Blend. Simple!

Calories: 205; Protein: 32g; Carbohydrates: 5g

Chocolate Peanut Butter Protein Brownie
In a regular cereal-type bowl, mix:

1 ½ scoops chocolate protein powder (or chocolate peanut butter flavored, if you’ve got it)
1 TB chocolate PB2
1 TB sugar-free, fat-free chocolate pudding mix
½ tsp. baking powder

Stir to blend.

Add 1/3 c. water and mix thoroughly.

Microwave on high for 50-60 seconds. Let cool for 5 minutes.

Calories: 240; Protein: 34g; Carbohydrates: 7 g

I was newly introduced to this too and LOVE IT! In my oatmeal, my protein shakes - i've even make peanut butter protein shakes for my kids & I - it's awesome stuff!!
