Super Simple Protein Brownies

I love a healthy snack, especially when it doesn't taste "healthy". I have a very busy work schedule and oftentimes find myself unable to get all my meals in for the day. Having this quick snack handy ensures I don't get too far off track during the day. Plus, it gives me my sweet fix. :)

Ingredients:

-1 cup oatmeal
-1 cup vanilla protein powder (I like to use casein)
-2 eggs
-5 heaping tablespoons unsweetened cocoa
-2/3 cup water
-1/4 cup extra virgin olive oil
-5 packets Stevia

Directions:

1) Mix all ingredients

2) Spread in small glass baking dish

3) Bake at 350 degrees for 20 minutes

4) Let cool and cut into squares

Yum!

I put them in the freezer last night and took one to work today in my cooler. Just had it for a snack - my oh my it's good! I like the casein protein better than whey. It's a finer grain of protein powder, almost flour-like. And with casein's slower burn I tend to believe this recipe is better for us than the quick-absorbing whey. I also like the fact that there isn't any milk. I'm finding myself less lactose tolerant as I get older so this recipe is perfect.

Thanks Kristin! this sounds wonderful:):) This may sound like a silly question, but is cocoa bad to eat during contest prep? If not, is there any substitutefor it in this recipe? maybe chocolate protein powder?

Not a silly question at all Kelly! During contest prep I don't eat these. The reason is 2-fold... (1) I try to stay away from protein powders except for my post-workout shake. I seem to respond to whole food best when trying to lean up for a contest. (2) The olive oil, cocoa, and stevia is unwanted calories for contest prep. I try to be sure everything I'm eating during that time is fueling my bod.

After my show in April, my hubby and I are taking a vacation to the beach. I do not want to get stuck eating garbage at the airport two days post competition, and was thinking of carrying these as a snack until we get to our destination. Do they need to be in the freezer or refrigerator?
