Competition Safe VERY Sweet Sweet Potatoes


This sweet potato recipe is so good you'll be anxious for your next meal. And it's safe to include in your competition prep diet!
- Preheat oven to 400 degrees.
- Cut sweet potatoes into cubes or slice in 1/4" to 1/2" slices.
- Coat cookie sheet with extra virgin olive oil.
- Add layer of sweet potatoes. It's okay if they overlap some.
- Spray potatoes with olive oil cooking spray.
- Sprinkle with cinnamon and stevia to taste.
- Bake for 25 minutes.
- Turn over potatoes, spray with more olive oil cooking spray and bake another 15 minutes.
So delicious my son even raves about this one!

If you're weighing your sweet potato for this recipe should you be weighing it raw and then cooking or just weigh it after it's cooked?

I personally weigh sweet potatoes after they are cooked. But that's because I precook all my foods and measure my body fat and weight each week. That way I know exactly what's going on with my body and can adjust calories appropriately.
In other words - it wouldn't matter if I weighed them cooked or uncooked as long as I'm consistent with that.
Please let me know if I'm not making sense there - it has been a LONG day and I need my coffee. ;)
