I used to love all sweet breakfast foods-doughnuts, pancakes, french toast, oh my! Thankfully this hybrid crepe recipe with limitless 'insides' and variations fix my cravings without all of the guilt! Enjoy FAB ladies! :)

Protein Crepes:

1/8 cup water
4 egg whites
1/2 scoop vanilla protein powder
1/2 tsp. immatation vanilla flavoring (optional)
1 tsp. cinnamon
1-2 packs of stevia
favorite filling(s)-see below

Mix all ingredients in a blender until smoothe. Spray 6 inch non-stick skillet with non-stick cooking spray and cook over med-high heat. Pour about 1/4 of the batter into the pan and spread out evenly in the pan by tilting. Cook for approximately 30 seconds on each side or until golden brown. Yeilds four crepes.

Fill with your favorite fruit, sugar free jam, fat free yogurt, fat free whipped cream, fat free/sugar free pudding,... or a combonation of all of the above! Filling options are limitless with a little creativity! YUMMMYYYY! :)

Nutritional Calculations:

13 g. protein (egg whites) + 1/2 scoop of your protien powder

68 cals (egg whites) + cals from your protein powder + additional fillings

Sugar and carb content depend upon your choice of fillings and protein powder...

Notes:

* I use a low-carb/no sugar protein powder and minimal fillings for cleaner dieting. ;)

*Be sure to watch cooking time carefully as the pan heats up, the cooking time will also decrease.

*Non-stick cooking spray is key, so apply to the pan often!


Other Variations:

Savory Crepes- Use the same basic recipe as above except omit sweet spices, sugar and vanilla flavoring for optional savory flavors. The crepe now becomes a clean soft tortilla or wrap for chicken, turkey, veggies, fish, lean ground meat... etc. A unflavored protein works well. YUMMMM!
