Easy Meal Prep for Competition


One of the things I hear all the time from clean eating naysayers is that they couldn’t eat what I eat because it’s too bland. Which candidly that absolutely amazes me because my food, to me, seems so rich and full of flavor. MUCH more so than any of the processed junk that I’ve ever eaten.
But when I’m eating quite clean I now know my taste buds have adapted and my body (and soul) craves healthy meals rich in lean proteins, vegetables, and healthy fats. It simply adapts to desire what’s best for it. And I love it!
So here’s one of my favorite clean eating, competition prep approved crock pot recipes. This one is perfect for the cooler weather and perfect to get you lean.

Prep time: 5 minutes
Cook time: 7 to 8 hours in crock pot (i.e. slow cooker)
Ingredients:
3 Boneless skinless chicken breasts
2 sweet potatoes
1 bag onions
1 bag mixed veggies
1 bag sliced sweet peppers
1 cup low sodium salsa
1 cup water
add salsa and water to crock pot
add chicken to crock pot and thoroughly coat with salsa
add sweet potatoes
add veggies
cook 7 to 8 hours on low
portion into meals and refrigerate
