If you're anything like me you're too busy to cook a whole lot. I love simple recipes that help me to keep my diet clean, whether getting ready for a figure competition or not. Sweet potatoes are my favorite clean carb. This is my super simple way to make them.

I'm not a big fan of freezing my meals. I love fresh food. But when you're a full time mom with more than a full time job, it can be difficult to cook every night. So I look for foods that are delicious, clean, and easy to make.

Sweet potatoes are one of those delicious foods all by themselves. Baked like a regular potato, they have a delightful consistency that can be mixed in with vegetables and meats to make and almost stew-like meal.

I'm not a fan of the skin on the sweet potato though. So after years of cooking these little buggers I found an easy way to get the skin off.

Here's the easiest recipe in the world for adding this healthy vegetable to your diet:

-Wash
-Pierce several times with knife
-Fold over several paper towels and place them and potato in microwave
-Cook on HIGH 10 minutes
-Take out and place in fridge
-Next morning cut off ends; slice skin lengthwise; peel the skin off the potato, like would peel a shell off an egg
-Cut up and add to meals

Voila! Super Simple Sweet Potatoes. :)
